Mac and Cheese Recipe.
Ingredients:
– Pasta of your choice.
– Two blocks of New York cheddar cheese.
– Two blocks of Colby cheese.
– Two blocks of smoked Gouda cheese.
– Butter.
– One can of evaporated milk.
– Dijon mustard.
– Heavy cream.
– Approximately two tablespoons of each of the following seasonings:
smoked paprika, onion powder, garlic powder, chicken bouillon, salt, and pepper.
Instructions:
First, In a small bowl, combine all the seasonings mix them well, and set aside.
Then shred all the cheeses and set them aside.
Next, boil your pasta in salted water with chicken bouillon for about seven to eight minutes. Once the pasta is done, drain it and add half a stick of butter to prevent the noodles from sticking together and add in some flavor.
In a large pot set on medium-low heat, melt half a stick of butter. Add half of the seasonings mixture and stir well. Then, incorporate about three tablespoons of flour, mixing thoroughly to avoid lumps. Pour in the can of evaporated milk slowly and continue to stir, ensuring the mixture becomes smooth and creamy. It is important to avoid burning the roux during this process.
Add the heavy cream along with the remaining seasoning mixture and a tablespoon of Dijon mustard. Cook the mixture slowly for about a minute while continuously stirring. Gradually add half of the shredded cheese, allowing it to melt and blend into the sauce, creating a rich cheese sauce.
Once your cheese sauce is ready, combine it with the cooked pasta, mixing thoroughly to ensure every piece is coated.
In a baking dish, layer the pasta, sprinkling the remaining shredded cheese between each layer. For the top layer, sprinkle some smoked paprika for added flavor and color.
Preheat your oven to 350°F. Bake the dish for 25 to 30 minutes, allowing all the cheese to melt beautifully. For a crispy top layer, broil for an additional two minutes.
