This delightful summer salad is my go-to dish all season long! It features crispy breaded chicken, fresh greens, juicy fruits, and a deliciously savory-sweet dressing. Here’s how you can make it.

– 2 chicken breasts, halved and pounded thin.
– 2 eggs, whisked until fluffy, with a pinch of salt and pepper.
– Panko breadcrumbs mixed with fresh chopped parsley, salt, pepper, and cayenne.

– Salad base (feel free to use any greens you have!):
– Chopped romaine lettuce.
– Chopped arugula.
– Chopped oakleaf lettuce.
– Chopped cucumbers.
– Chopped tomatoes.
– Sweet red plums, sliced.
– Mozzarella cheese balls.

– Dressing (store-bought honey balsamic or homemade):
– 1/2 cup balsamic vinaigrette.
– 1 tbsp Dijon mustard.
– 1 tbsp honey.
– 1 garlic clove, grated.
